Quinoa Salad | Healthy Food

The recipe is up for this amazing Colorful Quinoa Salad.
Quinoa Salad:

1 cup Quinoa
14 oz. cooked black beans (equivalent to one can)
1 red pepper
1 yellow pepper
1 cucumber, chopped (for an added crunch)
1/2 cup chopped cilantro
Scallions
1/4 tbsp. coconut oil

Dressing:

juice of 1/2 lemon (about 2 tablespoons)
juice of 1 lime (about 2 tablespoons)
1 teaspoon cumin
1 teaspoon oregano
freshly ground black pepper
3 tablespoons olive oil

1. Cook the Quinoa
2. While the quinoa is simmering, heat the coconut oil and sauté peppers and scallions
3. Once tender, mix the quinoa, black beans, peppers, scallions, cilantro, and chopped cucumber in a large bowl.
4. In a small bowl, combine all the dressing ingredients and mix well. Make sure to taste it first to adjust it to your liking, then pour over the quinoa mix and enjoy!
